Healthy Taco Salad

This is one of my favorite recipes for dinner. Its quick and easy too! Hope you enjoy….



1 lb lean turkey or lean ground beef

1 15oz can of black beans (drained and rinsed)

1 can low sodium tomato sauce

1-teaspoon olive oil

½ onion chopped

1-3 cloves of garlic



1 oz of light cheese

2 tbsp salsa


1. Heat oil in a non-stick skillet over medium heat. Add the onion and garlic to cook. Stir for about 2 minutes. Add turkey or ground beef, stir often and crumble with spatula until cooked through, about 5 minutes. Add tomato sauce, stir. Add black beans and stir for about 2-3 minutes.

2. To serve: Add lettuce to plate. Top with the turkey or ground beef. Sprinkle cheese, tomatoes, and salsa. Enjoy!

Hey Jon,

Made the taco salad instead of having nachos but did one modification used a lean cut of meat since I was cooking it for the nacho eaters. LOL I used 4 oz of the meat and since I was the only one eating it today, I cut the beans and salsa portion to little less than half. It was delicious!!! Also looked very fancy. HA! Next time try it for the family! Thanks for the cooking tip! 🙂
